Well hello there! So happy to be back here :)
This weekend was UHHH-MAZING! From three days off to family time to relaxing and the crown, we had a superb weekend!
No weekend recap this week so let's kick it off with another Table Talk Tuesday!
Zoodles with Shrimp
Zoodles= zucchini noodles
Now this recipe is SUPER easy and SUPER healthy!
Here is what you will need:
1 lb peeled and deveined shrimp
3 medium sized zucchinis
1T Garlic, minced
2T olive oil
1/4 cup white wine
2T lemon juice
Salt
Pepper
1. Peel your zucchini. Then using a vegetable spiralizer, create noodles.
(We got ours at our local cooking store! You can find a one HERE!
Or if you're in a pinch you can absolutely lay your grater flat over a bowl and shred your zucchini to achieve thin pieces of vegetable! )
2. In a skillet over medium heat, add your olive oil and garlic. Cook for about 2 minutes or until fragrant. Stir constantly
3.Add your shrimp to the skillet and cook for about 3 minutes or until shrimp is pink on all sides. Sprinkle shrimp with salt and pepper.
4.Remove shrimp from skillet and place into a separate bowl.
5.Drain excess liquid from skillet.
6.Pour white wine and lemon juice into skillet, heat liquid mixture until it begins to simmer.
7.Add zoodles and continually stir for about 2-3 minutes.
8.Return the shrimp back to pan, and toss everything together.
9.Finish off with a sprinkle of salt and pepper.
10. Serve and enjoy!

Last night was the perfect night for this meal! The weather has been unseasonably warm and it was the perfect meal to enjoy after a beautiful day spent outside!
Pat and I both agreed this meal was super light and delicious. The wine truly gives the noodles a sweet flavor that completes the dish!
You could always add extra veggies to the mix as well :)
We most definitely will be making this well into the warmer months!
