Today we are back to regular scheduled programming :)
The kids at school were making
chicken parm last week and
after smelling it I knew
I wanted to make it for dinner!
I decided to switch it up and turn it
into panini's instead of just the regular dish.
It was super easy and BEYOND delicious.
Chicken Parm Panini's
4 chicken breasts, flattened
2 1/2 cups Italian bread curmbs
Olive Oil
3/4 jar marinara sauce
1 onion, chopped
2 cloves garlic, minced
Fresh Mozzarella, sliced
Slices of Sourdough bread
Butter
1. Flatten chicken breasts. You can do this by putting the chicken in a ziploc bag
and then pounding it down with a rolling pin :)
2. Next, coat the chicken breasts in bread crumbs and set aside.
3. In a large skillet cover the bottom with olive oil. Then add chicken breasts.
Cook until the outside is golden brown and crispy.
4. Remove chicken from skillet and set aside. It is OK if the chicken
isn't cooked fully, you will cook it longer later.
5.In your skillet add another 1-2 Tablespoons of olive oil
and saute your onion & garlic.
6. Then add your 3/4 jar of marinara sauce to your onion and garlic mixture. Mix together.
7. Place chicken breasts in sauce mixture. Cover with a lid and let cook for about 15 minutes or until the chicken is no longer pink on medium-low.
8. To make panini's you don't have to have a press! You can simply use a skillet
and then place a heavy bowl or plate on top of your
panini to flatten it.
9. Butter one side of each piece of bread. Lay the bread on plate, butter side down.
Then build your panini. Add chicken first then 2-3 slices of mozzarella on top.
10. Close sandwich and lay on your press or in your skillet.
11. Cook each side of panini for about 5-7 minutes or until golden brown and
the cheese starts to melt!
12. Slice in half and ENJOY!
These were beyond a hit at our house since Pat LOVES Chicken Parm.
