Happy Tuesday!!
Even though summer "vacation" is over,
we still very much have summer weather here until almost
the end of September!
Today I am back to regularly scheduled programming :)
Throughout the summer we loved
making Salmon Packets for dinner.
What are Salmon Packets you ask?

They have "packets" attached to the name
because we fold the edges up to help
everything cook and they look
like little food packets :)
This has been so much fun and of course delicious!
We make our salmon packets with a side of rice and a veggie.
I am in charge of mine and Pat is in charge of his!
This week I went with my go-to packet recipe and Pat spiced his up.
This meal is easy AND has an easy clean up.
Here is what you will need:
Salmon Filets
1/2 onion, sliced
1 lemon, sliced
Fresh Asparagus, halved
Salt
Pepper
EVOO
You of course can add any veggies and additional spices that you like!
This time around Pat added mushrooms. You don't have to use lemon but I think
lemon paired with fish is divine :)
Here is what you will do:
1.Preheat oven to 400 degrees
2. Pat down salmon so it is dry.
3. Cover both sides of the filet with EVOO, S &P.
4. Lay a medium size piece of foil on your baking sheet and spray with baking spray.
5. Place asparagus, one lemon slice and onions on the foil.
6. Next, pile on the salmon.
7. Add more onions and lemon on top of fish.
8. Fold the edges of the foil in to create a "packet".
9. Place packets in oven for 20-24 minutes.
10. Serve with instant brown rice.
I used the mini minute rice cups that go in microwave for 1 min :)
