Meatball Monday- Chicken Parmesan Style

Ahhhhh Happy Monday!

Beautiful weekend weather we had here :)
Little cooler but SO enjoyable.

Today I am sharing a chicken meatball recipe for...

In our house we LOVE Chicken Parmesan.

These meatballs are full of 
that crispy chicken parm flavor!

Yummy and perfect for those Italian lovers in your house :)




Chicken Parmesan Meatballs

What you will need:

1 lb. ground chicken 
1/2 cup Panko bread crumbs
1/2 cup regular bread crumbs
2 tsp. oregano
1 egg
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. Italian seasoning
1/4 cup grated Parmesan CHEESE
1/2 Jar of your favorite pasta sauce
2 cloves garlic, minced
Olive Oil
Mozzarella cheese to top

1. In a large bowl combine ground chicken, all bread crumbs, oregano, egg, salt, pepper,
Italian seasoning and Parmesan cheese.

2. Using your hands, thoroughly mix together all ingredients until
evenly combined.

3. On your stove, heat a large skillet to medium-low. Pour enough
olive oil to cover the bottom of the skillet.

4. Spoon out the meatballs using your cookie scoop and place onto heated skillet.
 ( you can use hands to form the balls if you do not have a scoop)

5. Once all meatballs are scooped and in skillet, place a piece of
aluminum foil on top to cover meatballs.
Let cook for about 8-10 minutes.

6. Check your meatballs frequently to ensure that they are not burning.

7. After about the first 10 minutes, rotate the meatballs, so they
evenly cook on each side.

8. Once the meatballs are rotated, in your skillet pour
half a jar of your favorite pasta sauce.

9. Add the minced garlic to your sauce and let simmer for about 5-7 minutes.

10. Serve over pasta and ENJOY!
