It has been a while but I am BACK with a delicious
summer recipe!
It is light & summery and was a hit at our house.
It is SILLY easy and it makes great leftovers!
Bruschetta Casserole
Here is what you will need:
1 can diced tomatoes, undrained
1 pkg. STOVE TOP stuffing mix for chicken
1/2 cup water
2 cloves garlic, minced
1- 1 1/2 lb. chicken, cut into bite sized pieces
1 tsp. dried basil leaves
1 cup shredded mozzarella cheese
Here is what you will do:
1. Preheat oven to 400 degrees.
2. In a large mixing bowl, combine stuffing, tomatoes, garlic, basil and water.
Mix until stuffing is moistened.
3. Cut chicken into bite size pieces.
4. Layer chicken pieces on the bottom of a greased 8x8 pan.
5. Sprinkle 1 cup of mozzarella cheese on top of chicken.
6. Top with the stuffing and tomato mixture.
7. Bake for 30 minutes or until chicken is no longer pink.
8. Serve & Enjoy!
Pat LOVED this dish! I did as well and we both enjoyed the leftovers.
This is a great meal to bring a new mom or a friend who has just had surgery!
You could EASILY double this and freeze for a busy summer night :)
