Today I am sharing another great recipe I got from school!
I altered it a little based on what we had at home.
Leftovers were delicious and these are a
new favorite for us.
I plan on making a double batch next time because
these wraps are light, healthy and super easy!
Ground Chicken Lettuce Wraps
Ingredients
1 pound ground chicken
1 ½ t oil
1 onion, chopped small
1 green or red pepper, chopped small
1 clove garlic, minced
1 (8 ounce) can water chestnuts,
drained and quartered
1 carrot, shredded and chopped into
bite-sized pieces
3 green onions, chopped
1 head of iceberg or bibb lettuce, split apart
1/2 t. ginger
4T hoisin sauce
2 tablespoon soy sauce
2 tablespoon rice wine vinegar
1/2- 1 tsp Asian chile pepper sauce
4 teaspoons sesame oil
Directions
1. Rinse
lettuce leaves and pat dry, being careful not tear them. Set aside.
2. Wash
and begin preparing all vegetables in the order that you are going to need
them.
3. Meanwhile,
heat a large skillet over medium-high heat. Cook ground chicken until no pink remains and the chicken is crumbly, 5 to 7 minutes. Drain and discard grease; transfer chicken to a bowl.
4. Heat
oil in the same pan and sauté onion, garlic and pepper until slightly
tender. Stir in the hoisin sauce, soy
sauce, vinegar, ginger, and Chile pepper sauce. Cook for about 2 minutes.
5. Add
water chestnuts, carrot, green onions, sesame oil, and cooked ground chicken;
cook and stir about 2 minutes.
6. Pile
meat mixture in the center of your lettuce.
7. Wrap and serveJ
SUPER easy and delicious!
I chose chicken because we had it on hand, but you could always
do beef or turkey!!

trick or treating is done :)
