Tuesday is here!
That means it is time for a fabulous recipe
for your dinner tonight.
Today I am sharing a recipe
that is super easy and delicious!
I got this recipe from our Foods 3 class at school.
They have a unit all on international food
and THIS is one of my favorites.
When I taught the class last year by far this one
was my FAV!!
I served ours over orzo pasta
to complete the Greek theme.
Greek Style Chicken
1 (17 oz) container plain Greek Yogurt
I package of crumbled feta cheese
1 t lemon zest
¼c fresh lemon juice
4t dried oregano
1 t salt
½ t ground black pepper
½
t crushed dried rosemary
4 boneless chicken breasts, cut
into 1 inch pieces
1/2 large red onion ( or 1 small) , cut into 1 ½ inch wedges
1 1/2 large green bell pepper, cut into 1 ½ inch pieces
1 1/2 cups orzo pasta
What you will do:
- Preheat oven to 450 degrees.
- In a large mixing bowl combine yogurt, lemon zest, lemon juice, oregano, salt, pepper, and rosemary.
- Spread yogurt mixture on the bottom of a9 x13 baking dish, lined with parchment paper. Sprinkle feta crumbles on top.
- Place the
chicken in the dish, turn to coat. Add the chopped veggies and turn to coat.
- Bake for 20 minutes. Check the chicken to be sure it is cooked(no longer pink) and cook an additional 5-10 minutes if necessary.
- While chicken is cooking, boil a pot of water for your orzo pasta. Add in 1 1/2 cups when water is boiling.
- Drain pasta and serve chicken mixture over a bowl of orzo!
