Pioneer Woman

Today I am gushing about these new dry measuring cups and liquid measuring cup that I splurged to buy this week!! EEEEKKK!!! I went to check the mail yesterday and was so confused at the box that was shipped to me! I wasn't expecting the package until Friday so this was a HUGE surprise!

As I have shared before on the blog, I adore, love and obsess over the food network shows. You can catch me watching The Kitchen or The Pioneer Woman on any given Saturday. From 9 am -11 am my time is occupied with shows :)



I LIKE Ree Drummond on Facebook and 1. she recently opened a store that I am DYING to go to called The Mercantile and 2. She recently launched her spring tableware/baking/cooking line. When I saw the new line I DIED!!! They are beyond beautiful and so adorable.






My credit card happened to buy the measuring cups- liquid and dry! Now as FACS teacher my obsession was in full force and I knew this buy was a MUST!

Dry Measuring Cups
These come in your standard sizes: 1, 1/2, 1/3, 1/4
All of the patterns are beautiful and unique but I have to say out of these my favorite is the 1 cup!

Ree has her line at Walmart, meaning it is affordable and you can find the products at just about any store :) you can find her Spring Line HERE!

Table Talk Tuesday- Enchiladas

Well more snow here today... UGH! Come on March! 

Today I am sharing my new FAVORITE recipe!
This recipe is delicious, easy, and I could make it every night of the week.

I have a deep, deep love for Mexican food. All the queso, guac, chips and tacos. I could eat it every day.

I had been in the mood to make beef enchiladas, but the timing just never worked out. 
Last Thursday I took to the kitchen and let me tell you, this did NOT disappoint!

Here are My....
Beef Enchiladas 

What you will need:
1 lb. ground beef.
1/2 small onion, chopped
1 package Flour Tortillas (8-10 count)
1 can cream of mushroom soup
1 can red enchilada sauce ( I bought a 28 oz can)
1 bag sharp cheddar cheese.
8x8 baking dish  




What you will do: 

1. Preheat over to 350.

2. Brown meat and onions on medium heat in your skillet.




3. Drain grease. Add 3 Tablespoons of enchilada sauce and simmer for 3-4 min. 

4. Add 1 cup shredded cheese to meat mixture. Mix until cheese is melted.




5. Combine 1 1/2 c of the enchilada sauce with your can of cream of mushroom. Mix well. 





6. Pour about 1 Tablespoon of the sauce mixture  on the bottom of your 8x8.

7. Take one tortilla at a time and fill with meat mixture. 



8. Fold sides in and places ends on the bottom of your 8x8.



9. Pour the remaining mixture on top of the filled tortillas. 


10. Sprinkle a HEFTY handful of cheese on top. 



11. Place baking dish in oven for 15 minutes or until cheese is melted.




Serve & Enjoy!

** Few things**
1st- this makes a TON. I would recommend a 9x13 or TWO 8x8. 
2nd you could always leave the cheese out and just add more sauce to your meat mixture and on top!



Pat is always my go to taste tester and he is SO torn whether this ranks number 1 or 2 in his book. I have made a TON of meals this winter and this by far is a KEEPER!



Super easy and the flavor of the enchilada sauce is to DIE for!

Weekend Recap- Snow edition

Another Monday is here!!! This weekend went by TOO fast for my liking. We have another full week ahead and I am counting down the days until Marco Island :)

Here is a little look into our weekend!

FRIDAY
Pat and I both got home from work by 430. We could have totally relaxed all night and stayed in but we decided to hit the gym! He is always a motivator and is always on his A game at the gym. I ran a little, biked and then we did abs together.
We relaxed at home and then went to Panera for a quick dinner!


I then dragged him to Bed Bath & Beyond for a solid 45 minutes. Now I would spend my entire life in that store. SO many things I want and must have :)
We headed home and hit the hay early, which was incredibly wonderful!!

SATURDAY 
Pat had a tournament to coach so he was up early. I was up after him and then headed to my parents to see my brother who was home for a short 24 hours. He and his friends are on their senior year spring break from IU. Oh to be that age again! I spent some time watching old home movies AGAIN,eating and relaxing!


I was then off to watch pat coach mid afternoon. His team this year is full of talent,so It will be a fun season to watch him coach! They won 2 out of 3 games and ended up in 2nd place! Way to go!!! I was proud :) 
We hung out with some friends and watched a whole lot of basketball Saturday night!
Bring on MARCH MADNESS!!!!

SUNDAY 
I was sure to have bacon on hand this weekend :) We love Mariano's thick cut bacon! So delish! So our breakfast was bacon, waffles and I had a side of yogurt! The time change got us BIG. We spent the morning relaxing and started SURVIVOR!!



In the afternoon I went swim suit shopping (UGH WHYYY) with my mom. I am BEYOND picky when it comes to suits. I am not a pattern fan and anything that is slimming works for me! 
I ended up only finding one top I liked but scored a dress for a wedding this summer! WOO!

We did some grocery shopping later on and then stopped for come Chipotle. We spent some time at Pat's parents and totally lost track of time with the silly time change! We headed home and got ourselves ready for the week. 
We finished SURVIVOR and let me tell you I already have those I CANNOT stand. I am loving the Blue team (I can never remember their tribe names so I use color). The red team I can SO do without. 
Then it was time to relax and mentally prepare for another long week!!


SURVIVOR this season is all contestants who have played before. Some I know but some are from WAY back in the day! 



WHO I LOVE:
Debbie (she is CRAZY and I love her. Blue)
Zeek ( He was on last season and I loved the fight he put up. Blue)
Aubry (yes I know... Pat CAN'T stand her! But she is quirky and I like her. Red)
Caleb ( We watched him on his season. His time was cut short due to medical. I am rooting for him! Red.)

WHO I DO NOT LOVE:
Sandra (oh bless. No. I hate how she refers to herself as "queen" Red.)
Cirie( oh she has to go...... Blue)
Troy (He is just GROSS. I am not a fan. He looks grimey. Team?? I can't recall)

It will be an interesting season to say the least!!

The Bachelor ends tonight so Survivor comes back just in time! 
ALSO!!! Since Rachel is officially gone, I can now share I am this Season's winner!!! Pat and I do a contest against each other. We pick the players for our team and whoever has the winner gets treated to dinner by the loser! Raven and Vanessa are BOTH mine so either way I am looking forward to a nice meal :)

Pat is coaching tonight so we are busy busy!

Tomorrow is Table Talk Tuesday and I have THE best meal to share. It might just be our new favorite!

Pat has a tournament this weekend so you can catch us poolside on Saturday. Sunday is calling for errands, cooking and relaxing!
