Today I am sharing a recipe I tried last week.
We LOVED it.

Crispy Green Chile Chicken Tacos
What you will need:
1 lb. cooked shredded/sliced/cubed chicken
1/4 cup sour cream
1/2 cup shredded monterey jack cheese
2 (4 oz.) cans green chiles, drained
1/2 green pepper, chopped
4-5 green onions, chopped
1 package of stand alone taco shells (easy for stuffing)
What you will do:
1. Preheat oven to 375 degrees.
2. Shred/chop/slice cooked chicken and add to a large mixing bowl.
3. Add sour cream, cheese, chiles, green pepper and HALF of your green onions.
4. Mix well.
5. Lightly spray your baking dish with Pam.
(You can use any size! I used a large 9x13)
6. Line your baking dish with taco shells.
7. Sprinkle a little green onion into the bottom of each.
8. Gently scoop and fill each shell with the mixture.
9. Top each taco with a little cheese and pop into the oven.
10. Bake for about 11-13 minutes or until shells are golden brown.
ENJOY!!!
This is a new favorite meal for us!
I even thought of substituting the sour cream for plain Greek yogurt!

It makes a TON so we even had yummy leftovers the next day.
